Microvinification
Tireless research
Microvinification is the process that allows us to make the most of our artisan skills, from tending the fruit to working in the winery. We apply different techniques to the same grape variety to understand which expresses its potential to best effect. This is how we assess the winemaking potential of grapes and soils, and study the chemical, physical and sensory characteristics of rare vines found in the area and cultivated in experimental fields.


Technology at the service of quality
Evolution is our goal
The grapes are carefully selected according to their ripeness. The convective motion of the refining vats is then harnessed, and the grapes are pressed using centrifugal force. Our idea of evolution includes advanced machinery, but starts from the experimental approach of the winery, and the desire to strive for something more. Through this approach we achieve even higher levels of quality, for wines that reflect our style.

Selective Process Winery
We have opted to use a linear selector with a sorting table so we can meticulously eliminate the stalks that cause excess tannins. The optical selector, on the other hand, accurately selects grapes according to our own colour, size and ripeness parameters. This precision is the basis for the estate’s Cru wines.


THE EXTRACTIVE 2 DYNAMIC WINE PRESS
It introduces an advanced pressing concept because it splits open the grapes with centrifugal force. We adjust the machine’s energy to avoid pulping the skins and to open the grapes to the optimum degree, depending on how ripe they are: this allows us to extract the best must, polyphenols and aromatic components, resulting in high quality wines.


Galileo Tanks
Spherical tanks in lightened concrete allow for optimal wine refinement thanks to the convective movements that are generated inside. The surface for heat exchange with the wine covers the entire tank, allowing for particularly effective temperature control, while the spherical shape provides enhanced thermal insulation.


Cocciopesto amphorae
These containers are made entirely from natural and/or recycled raw materials such as clay; they are not fired during production, but naturally air-dried.
The microporosity of this material guarantees controlled micro-oxygenation of the wine; ageing wines in these containers encourages a slow and constant evolution while respecting the sensory characteristics of the grape variety.
